The evenings are drawing out, the temperatures are rising, and the birds are singing. Spring is in the air! And boy is it welcome this year. After three months of hard lockdown, we really needed something to help boost the mood, and the return of Spring alongside a relaxing of restrictions is just what we all needed.

Who doesn’t feel re-invigorated as signs of life start to emerge all around us? The new season produce starts to gradually become available throughout Spring, augmenting the limited Winter palette and allowing our imaginations to run riot.

Of course, Spring is synonymous with Lamb, and although it’s been a bit more expensive this year, the quality is superb. From robust Roast Leg of Lamb, to delicate Lamb Chops, or why not try our personal favourite, zingy Lamb Koftas.

And the braver souls will already be dusting off the BBQs, and getting the grills ready, ahead of another long season of outdoor entertaining. We’ll be bringing you some fantastic outdoor dining recipes over the coming months, as well as our ultimate guide to BBQ. Plus, we’re trying out some new ideas with our prepared meats in shop… we’ll keep you up to date on those.

On top of all that, now is when we really start to see a surge of new seasonal produce become available. From asparagus, spring greens, new potatoes, salads, sprouting broccoli, spring onions, celeriac, plus first harvests of gooseberries and rhubarb.

And don’t forget, now’s when a lot of local fish starts to come back into season.
