Cheats Porchetta

Love a hog roast? Then you're going to love this Italian classic, which is stuffed full of garlic, herbs and seasoning, and is utterly sublime. This version doesn't quite reach the highs of the Porchetta trucks that you'll find at parks and fetes across Italy, simply because we're not expecting you to roast an entire prepared pig, but it comes a very close second! Cheats Porchetta Traditionally made from the whole pig, this version is a lot easier to pull together, and isn't so big that you'll be eating it for days on end. Roasting Pan with RackButchers String 2 kg Pork Loin (boned. Skin on, or off if preferred keeping a good cap of fat)1 whole Pork Tenderloin (approx 500g)8 cloves…

Quick Roast Chicken with Lemon, Thyme and Garlic

This is one of our go to meals when we need a pick me up, especially served with crispy chips and corn on the cobb. Crispy, juicy, and about as easy as it gets. Although we recommend that you use a jointed whole chicken, which we'll happily do for you in the shop if you ask, it works just as well with skin on chicken breasts, legs or just thighs. We love the mixture of the dark and white meats though. This basic method can also be easily adapted to your favourite flavours. Mix things up with powdered chipotle chili, or tone it right down with just a hint of sage. The possibilities are truly endless. When it comes to pairing it…

A takeaway classic that's really easy to do at home. Not only does this likely use less oil than your local takeaway, the great fresh flavours of this dish are at their best when freshly prepared. Char Siu Beef with Broccoli

Beef mince is such an incredibly versatile ingredient, but I think we all tend to get a little bit stuck in terms of inspiration. So this dish really turns everything on it's head. It's such an easy dish to make, just a quick blitz in the food processor to make the sauce, and then everything into a wok for a few minutes. Plus, the noodles almost cook themselves. And on top of that, it tastes sensational, full of fresh Asian flavours with a decent kick to really get your taste buds going. Char Siu Beef with Broccoli A great midweek supper, and a refreshingly new way to use beef mince. Plus, about as quick as it gets. Large WokHeatproof bowl 120 ml…

As the weather starts to brighten, even if we're not quite there yet, those tantalising glimpses of summer alongside the easing of restrictions have got us thinking about great summer dishes for sharing with friends and family. Lamb koftas are a Middle Eastern classic. Super quick and easy to make, full of fresh flavours, and ideal for serving outdoors buffet style. Healthy Chicken Cacciatore

Alla cacciatora refers to a meal prepared 'hunter-style', and that's exactly the sentiment that this dish kindles. Onions, garlic, herbs, tomatoes and white wine. It's all there, but surprisingly light in touch and low in calories. The addition of the olives adds a depth of flavour that makes this idea for cold winter evenings. Healthy Chicken Cacciatore Classic Italian hunters stew with chicken breast, a dash of wine and olives. 2 tbsp olive oil3 slices prosciutto (or thin streaky bacon, chopped)1 large onion (peeled and chopped)2 cloves garlic (peeled and chopped)10 leaves sage (finely chopped)2 sprigs rosemary (leaves only, finely chopped)4 large chicken breasts (skinless)200 ml dry white wine400g g tinned plum tomatoes 2 tbsp cherry tomato puree200 g chestnut mushrooms (halved)160…

Chicken, Black Bean and Kale Soup

Inspired by the classic Mexican soup, this dish is a double whammy. Not only is it a good way to use of leftover chicken (although we often poach a chicken specifically to use in dishes like this), it's such a healthy dinner and so full of flavour. The black beans create a fantastic background note, as well as naturally thickening the soup, and the spices and lemon give it a great tang. Use a low sodium stock cube if using leftovers and this dish. Chicken, Black Bean and Kale Soup Delicious way to use up leftover chicken that's got just the right level of spice 2 tbsp olive oil4 cloves garlic (crushed and peeled)5 spring onions (roughly chopped)1 bunch coriander (stalks chopped,…
