Cheats Chicken Kiev

Another all time classic, doesn't everyone love the Chicken Kiev? The dish itself has disputed origins, although most consider it to be Eastern European, hence the Kiev moniker. In the classic French, Supreme de Volaille a la Kiev, it's clear that this is a stuffed chicken breast dish... but what if it wasn't? This version turns everything inside out, keeping all the components but making it a cinch to prepare and healthier as well. We're not going to lie and say that this is as good as a lovingly prepared traditional Kiev, it's clearly not, but at half the calories and tasting this good, we think this will soon become a new family favourite. Cheats Chicken Kiev All the flavour, texture and…

Healthy Chicken Cacciatore

Alla cacciatora refers to a meal prepared 'hunter-style', and that's exactly the sentiment that this dish kindles. Onions, garlic, herbs, tomatoes and white wine. It's all there, but surprisingly light in touch and low in calories. The addition of the olives adds a depth of flavour that makes this idea for cold winter evenings. Healthy Chicken Cacciatore Classic Italian hunters stew with chicken breast, a dash of wine and olives. 2 tbsp olive oil3 slices prosciutto (or thin streaky bacon, chopped)1 large onion (peeled and chopped)2 cloves garlic (peeled and chopped)10 leaves sage (finely chopped)2 sprigs rosemary (leaves only, finely chopped)4 large chicken breasts (skinless)200 ml dry white wine400g g tinned plum tomatoes 2 tbsp cherry tomato puree200 g chestnut mushrooms (halved)160…

Teriyaki Steak with Fennel Slaw and Sweet Potato Wedges

So there really is nothing authentic about this dish, but it's Asian influences are there front and centre. Bursting with punchy flavours, low in carbs, high in protein, and a really different take on steak night. We've made our own teriyaki sauce, which can be used as a flavouring in other dishes and certainly reused as a marinade a few times, although there's really nothing wrong with using a shop bought version if time or inclination dictate. And of course you can use any cut of steak, although a thick cut sirloin seems to work really. To keep the fat content even lower, you can trim the steak, but do so after cooking to keep the full flavour. Teriyaki Steak with Fennel…

Healthy Beef Stroganoff

Beef Stroganoff is a classic Russian dish of sauteed beef in a cream sauce with mustard. Here in the UK this tends to be a very rich cream sauce, although traditionally the dish was always prepared with sour cream. This version stays true to that, but swaps in half fat creme fraiche as a great way to keep the fat and calories down. Served with brown rice it's high in protein and high in fibre, as well as tasting absolutely delicious. I'm certain you're going to love it. Healthy Beef Stroganoff Classic steak and mushrooms in a creamy sauce, but with a healthy twist 1 tbsp olive oil1 large onion (peeled and sliced)1 large clove garlic (crushed, peeled and finely chopped)10 g…

Healthy Chicken Tikka Masala

Chicken Tikka Masala is a classic Indian dish of marinated chicken in a spiced tomato curry. Except of course it's not that simple, as it roots are as much here in the UK as they are in India. And whilst there's no doubting that it's a classic, you're unlikely to ever see quite the same recipe twice. Still, we completely understand why it was voted the nations second most favourite meal just a short few years ago, we love it. As with all the dishes in our January series, this version has been tweaked to be the healthiest it can be. Whole chicken, skin removed, is marinated in the classic yoghurt spice blend. The chicken is then slowly baked without oil to…

Healthy Spaghetti Bolognese

The dish that we know of as Spaghetti Bolognese is as British as it is Italian, bearing little resemblance to the Ragu Alla Bolognese that is usually served with tagliatelle or used to prepare lasagna. But that by no means detracts from it's significance as culinary icon. Simple and quick to prepare, using cheap and readily available ingredients, it's a long time favourite here in the UK, whether at home or eating out. In this version a few simple adds and swaps turn it into a super healthy supper. Totalling just 450 calories a serving, it also provides nearly 60% of your daily protein requirements and a quarter of your fibre. Healthy Spaghetti Bolognese The classic British Italian dish, just cooked spaghetti…
