A slightly milder rub with just the right blend of herbs and spices to bring out the very best of chicken. Rub a little oil onto whole chickens, spatch-cocked to cook easily on the grill, then rub this in liberally. Cover with film and rest in the fridge for a couple of hours, before cooking over a low heat with the lid down, or reverse searing starting things off in the oven. It’s also great for chicken wings. Just rub this all over, chill for 30 minutes, and then cook over a direct heat.
Poultry Rub

Ingredients
- 9 tbsp sea salt
- 9 tbsp garlic granules
- 7 tbsp smoked paprika
- 2 tbsp chili powder
- 6 tbsp dried rosemary
- 6 tbsp dried oregano
- 6 tbsp English mustard powder
- 6 tbsp cracked black pepper
- 6 tbsp fennel seeds
- 3 tbsp celery salt
- 2 tsp tumeric
- 2 tsp cumin
Instructions
- Weigh out all of the ingredients into a bowl.
- Put the lot through a blender and blitz to the required consistency. Keep it fairly coarse for a rub, go extra fine if planning to use it as a seasoning to shake onto cooked foods.
- Transfer to two jars or containers and seal.
